Homemade #1- BAGELS

When researching a recipe for bagels, I came across a multitude. Because Marissa had asked me to make them on Sunday, and it was already Saturday, I passed by the recipes that called for an overnight sponge, and settled on this recipe: http://lazysusin.blogspot.com/2008/01/asiago-cheese-bagels.html, where the author tweaked this original recipe: http://www.jasonandshawnda.com/foodiebride/archives/563. I tweaked it just a little more: leaving out most of the vanilla from the original recipe: leaving only 1t, and adding a bit of salt. It was remarkably simple:

From bagels
proof 2 1/4 c warm water, 1 T sugar, and 1 pkg yeast for 10 minutes

combine 6 c bread flour, 1 1/2 T salt, 1 T oil, 1 t vanilla, and water mixture
mix the dough, then knead for ten minutes

rise for an hour, flip onto floured surface, punch down, knead, and form into bagels
cover and let rise thirty minutes

boil 2-3 minutes

egg wash (1 yolk, 1 T water)

"decorate" (we used crushed pepper and asiago cheese, but we put the cheese on 5 minutes in)

bake 12 mins at 500 degrees
